Winter Ale

Initial water: ~2.5 gal tap water
Grains:

3 lb Pale
1 lb Crystal
20L
1 lb English Light

Heated water to 150-160°, then grains steeped 45 min.
Strained and sparged, brought back to boil, then removed heat. Added liquid malt extract:

6.6 lb Pale Ale
1 lb Gold

and hops:

2 oz Kent Golding

Boiled 45 min. Added

0.5 oz Fuggle.

Boiled 10 min. Added

1 oz Kent Golding

at 60 min took off heat. Cooled to 80° in 30 min. Added water to 5 gal. Pitched White Labs WLP004 Irish Ale Yeast.

Original gravity 1.075.
Final gravity with priming sugar (1 cup) 1.024 @ 70°
= 6.68% ABV.
